Mocha Cake

Combine:

2C flour

1 1/2 tasp baking powder

1 1/2 tsp baking soda

1 tsp salt

1/4 C cocoa

2 C sugar

Add:

1 C soy milk

1/2 C vegetable oil

2 tsp vanilla

2 vegan egg replacements

1 C coffee, still hot

Grease 2 9" cake pans. Pour in batter. Bake in the middle of the over at 350 degrees for 30-35 minutes, or until a toothpick comes out clean.

Let cake layers cool completely before removing from pans. To remove easily, boil some water in a large skillet and hold the pans over the steam until teh bottom of the cake is loosened.

Ice between layers and on top with mocha icing:
With a hand mixer, mix:

1/2 C melted margarine

3 1/2 C powdered sgar

1/3 C coffee

1 tsp vanilla

1 tsp cocoa
